Water retention is the ability of mortars and plasters to retain water under suction, preventing water loss in substartes which, if too fast, can affect normal cement hydration, thus reducing mortar strength and bond strength between mortar and the substrate, especially when the mortar is in contact with relatively permeable surfaces.
